I made a pumpkin cheesecake for Thanksgiving dinner at friend's home. I wasn't sure if it was undercooked or overcooked. I think I overcooked it. The crust had a taste that it was about to get burnt. Cracking is a sign of being overcooked. However, if it doesn't have a crack, then the cheesecake is somewhat raw. My mom and I tried many cheesecake recipes and almost all of them cracked! Aurgh. Frustrating! Since I cannot stand rawness with pumpkin ingredients, I must have it really cooked well. You can see in the photo that my pumpkin cheesecake almost blew up like a failed souffle.
Anyway, this pumpkin cheesecake was made from scratch and baked. I used the boxed ginger cookie thins from IKEA. They tasted great in this crust I whipped up!
