Orange-Cranberry DressingIngredients
- 2/3 cup organic olive oil
- 1/2 cup fresh orange juice, with pulp
- 2 tablespoons dried cranberries
- 1 small garlic clove, diced
- 2 teaspoons finely chopped red onions
- 1 teaspoon Dijon mustard
- 1/2 teaspoon whole pink peppercorns
- 1/2 teaspoon mineral or sea salt
- 1/2 teaspoon orange zest, divided into 1/4 teaspoons
Directions
Save 1/2 tablespoon cranberries and 1/4 teaspoon orange zest, put the remaining ingredients into a blender. Blend on high for 10 minutes. Finely dice the cranberries, drop them into the dressing mixture with 1/4 teaspoon orange zest. Blend on low for 10 to 15 seconds. Store in an airtight salad dressing bottle in the refrigerator for up to 1 week. Best served at room temperature.
